Pumpkin Muscade de Provence

A much loved French heirloom variety, known as The Fairytale Pumpkin.  A beautiful squash with a superb depth of flavour and highly nutritious.  Rich in Vitamins A, B complex and C, plus omega-3 fatty acids.

Medium to large in size, averaging 15-20 pounds and is a round flattened shape. The smooth rind is deeply ribbed and ripens from green to a rich, burnt orange-terracotta.  The fine-textured firm flesh is vibrant orange and contains a small cavity with minimal fibers and filled with flat teardrop shaped seeds, rich in zinc, perfect roasted with a little salt or chilli as a snack.   Roast or bake in wedges or cakes, use in soups or eat raw,  grated into salads.

Muscade de Provence belongs to the “cheese pumpkin” group, so-called for their resemblance to a wheel of cheese.  One of the only hard squash varieties that can be consumed raw, it is known for its long storage capabilities, delicate flesh, and sweet taste.  
Pick when ripe leaving a long stalk on.  Stand in the sun for a couple of week to harden the skin, unless wet, then keep in a well-ventilated room.  Grow in full sun in moist, well-drained soil.  Water and feed regularly.
